BBQ Sauce and Rub for smoking bone in pork shoulder (Favorite of Andrew)

Rub:

  • 1 cup brown sugar
  • ½ cup salt
  • ¼ cup black pepper
  • ¼ cup paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • Dash cayenne pepper

Save 4 TBS rub for the injection and the sauce.

Injection:

  • 1 cup apple juice
  • ¼ cup apple cider vinegar
  • ¼ cup water
  • 2 TBS Worcestershire sauce
  • 1 ½ tsp rub (from above)
  • 2 TBS maple syrup
  • 1 TB melted butter

BBQ Sauce: 

When meat is done smoking, combine:

  • Drippings from meat
  • 1 cup apple juice
  • ¼ cup apple cider vinegar
  • Dash Worcestershire sauce
  • ½ cup brown sugar
  • 2 ½ TBS of the dry rub (from above)

To thicken, mix 1 TBS cornstarch with ¼ cup cold water and add to sauce as needed.
