Cherry Cobbler (Favorite of Grandma Linda)

Ingredients:

  • ½ cup sugar
  • 1 TBS cornstarch
  • 2 ½ cups canned cherries and juice
  • Butter
  • Cinnamon
  • 1 cup flour
  • 1 TBS sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 3 TBS shortening
  • ½ cup milk

Directions:

Mix ½ cup sugar, cornstarch, and cherries in saucepan and bring to boil.  Stir constantly for 1 minute, then pour into baking dish and dot with butter.  Sprinkle with cinnamon.

In bowl, stir together flour, 1 TBS sugar, baking powder, and salt.  Cut in shortening until mixture looks like “meal.”  Stir in milk.  Drop by spoonful’s onto hot fruit.  Bake at 400 for 25 – 30 minutes or until golden brown.  Serve warm.
