Black Bean, Corn, and Feta dip (Favorite of Marsha)
Ingredients:
- 1 can black beans, drained and rinsed
- 1 can shoe peg corn, drained
- 1 – 6 oz. package crumbled feta cheese
- chopped roasted red peppers
- 4 scallions, chopped
- 1/3 cup balsamic vinegar (or white balsamic vinegar)
- 1/3 cup olive oil (or a little less)
- 2-3 Tbsp. sugar (more or less)
Directions:
Chop scallions. Combine scallions with black beans, corn, and crumbled feta. Whisk together vinegar, olive oil, and sugar. Pour over other ingredients and toss. Chill. Serve with tortilla chips.
