Black Bean, Corn, and Feta dip (Favorite of Marsha)


  • 1 can black beans, drained and rinsed
  • 1 can shoe peg corn, drained
  • 1 – 6 oz. package crumbled feta cheese
  • chopped roasted red peppers
  • 4 scallions, chopped
  • 1/3 cup balsamic vinegar (or white balsamic vinegar)
  • 1/3 cup olive oil (or a little less)
  • 2-3 Tbsp. sugar (more or less)


Chop scallions. Combine scallions with black beans, corn, and crumbled feta. Whisk together vinegar, olive oil, and sugar. Pour over other ingredients and toss. Chill. Serve with tortilla chips.
