Coffee Cake (Favorite of Peanut and Gappy)

Directions:

1. For topping, mix together:

• 1 Cup sugar
• 2/3 Cup oil

    In another bowl, mix together:

• 2 Cup flour
• ½ tsp. baking powder
• ¼ salt
• 4 TBLS cinnamon

Sift into the above sugar and oil mixture and set aside.

2. For cake batter, in a large mixing bowl mix together:

• 1 Cup sugar
• 2/3 melted Crisco (or oil)
• 2 Cups flour
• ½ tsp. salt
• 3 tsp. baking powder

Add:

• 2 eggs and
• 2 Cups milk

Mix until smooth.  Pour cake batter onto a cookie sheet with slight edges and then crumble the topping over this. Bake at 350 degrees for 20 minutes or until done. When cool, sprinkle confectionary sugar over the top. If you want a thicker cake, you can use a 9x12 cake pan.
